Speedy Fudge

This sweet treat is simply to make, is loaded with protein, and a great way to kick my sweet tooth chocolate cravings...

Speedy Fudge
Ingredients:
100gm (5 tablespoons) peanut butter
30gm vanilla protein powder
20gm (1 tablespoon) cacao powder
30gm of coconut oil 
Sprinkle of pink salt
50gm raw nuts (choose your favourite - I like cashews and walnuts, but almonds, pecans or pistachios will also work)  

Method:
Mix all ingredients except for the nuts until smooth and creamy. 
Mix in crushed nuts and place into square pan and smooth out. Tap the pan/mould gently against the bench to remove any bubbles. Place in the freezer until set. I like to store mine in the freezer for a bit of extra crunch. But if you like a softer fudge, the fridge is perfect. 
PS. I clean the bowl up by using a few strawberries to gather up the leftovers. So yum! 
(Approx 80 calories per piece)

Nana Ice Cream Recipe



One of my favourite treats is Nana Ice Cream. Really easy to make if you have a blender/food processor/thermomix etc.

I always have bananas in the freezer, ready to whip this great treat up.

Base recipe (serving for one) 
2 frozen bananas
2tbs (or as required) of almond, coconut, rice milk. (You can use dairy if you wish) 

Place all ingredients into the blender until smooth. If ice cream is a little runny, place into the freezer until it resets. Done! 

It's great on its own with your favourite toppings, but if you want to give it some extra favour try these combinations. 

Additional ingredients:

Choc Hazelnut - 1 tsp of cacao, 2 tbs of chopped hazelnuts, 1 tbl of cacao nibs

Crunchy Peanut Butter - 1 tbs of peanut butter, 2tbs of peanuts, sprinkle of Himalayan Sea Salt

Salted Caramel - 4 soaked medjool dates, 1 tsp of Vanilla protein powder, 1 tsp of Himalayan Sea Salt. 

Berries - 1/2 cup of frozen strawberries or raspberries.
